Cod with Cheese & Red Beets Recipe

Ingredients:
- 700 g of cod
- Salt & Pepper
- 50 g of white bread
- 50 g flavourful hard cheese, grated
- 25 g melted butter
- 600 g fresh red beets
- 150 g salted pork (or bacon)
- Butter for frying
Prep time: Approx. 1 hour
Instructions:
- Boil the beets in salted water with the skins on, in order to retain their fine colour, until they begin to soften. Drain and let them cool. Peel the skin from the cooked beets and cut into wedges
- Divide the cod into portions and place on a greased oven-proof dish. Season lightly
- Trim the crusts off the bread, crumble it into a bowl and mix it with the grated cheese and melted butter to make a thick paste
- Cook the fish in the oven at 175 °C (347 °F) for 10-20 minutes depending on the thickness of the fish. Use a meat thermometer and remove the fish when it has an internal temperature of about 47 °C (117 °F)
- Cut the pork or bacon into small pieces and fry on medium heat until golden brown. Put the beets in the same frying pan, add some butter and salt and keep warm until the fish is ready
