A Traditional British Feast: The Starter

Considering we haven’t had enough to eat over the Christmas break, we thought that we would help everybody out with a Traditional British Feast – a three course meal for four people – starting with…

Stilton Stuffed Mushrooms (for four people)
Ingredients:
- 125 g of butter
- 5 x shallots finely chopped
- 150 g white breadcrumbs
- 125 g Stilton cheese
- 1 x tbs freshly chopped sage
- 2 tbs freshly chopped parsley
- 300 g open cup mushrooms
Preparation time:
45 min
Instructions:
- Preheat oven to 170°C (325°F)
- Melt butter in pan, add shallots and soften for 3-4 minutes
- Place bread in food processor and reduce to crumbs, add the softened shallots, stilton and herbs, process briefly to combine
- Remove the stems of the mushrooms, and then press the stuffing lightly into the caps
- Place on a baking tray and bake in a preheated oven for 35 minutes
Tip:
Serve with salad leaf garnish
